WHITE WINES

The white wines are produced through the employment of innovative techniques that preview the wine processed in absence of sulphur dioxide and by means of application in vineyard of the DMR (double reasoned maturation). The grapes are treated with the pellicular maceration to extract the maximum aromatic upgrade and to contribute to the longevity and goodness of the future wine. The sparkling wines endure a process of fermentation controlled to lowest temperature. Every process of wine follows a specific protocol of job.

RED WINES

The red wines are expressed to the maximum through a calibrated maceration carried out in the horizontal rotovat. Successively the wines will be selected and the aging is in barrels of Slavonia oak and barrique of French of Allier oak. The wines are stored up in wood barrels.

Laboratory

Steel vats
The rifermentation of spumante wines and sparkling wines is obtained at the Martinotti/Charmat method that happens to lowland temperature allowing to obtain fine wines with small perlage.

Aging
It happens substantially for red selected and is obtained from a proportion between percentages predefined between wines in barrique and barrels. The wines are stored up in wood barrels for 2 years therefore, for examplification, 1 wine of 2008 will be in barrels of wood till 2010 and will come bottled in 2011 and put in sale after 6 months.

Filling
The filling is obtained by a great quality equipments that wash and dry the bottles and fill nitrogensaturated bottles. In this way the wine does not enter to contact with oxygen .
