VINIFICATION AND REFINING
Yield: 6000 kg per hectare
Harvest Time: mid September – Merlot, October – Cabernet Sauvignon
Harvest: by hand in baskets (10 kg)
Carbonic Maceration on Merlot for 12 days
Fermentation: in horizontal Rotovat for 7 dfays and post fermentative maceration for 3 days
Refining: 14 months in barrique and 2 years in wooden barrel

ORGANOLEPTIC REFERENCES
Colour: deep ruby red tending to garnet red
Fragrance: ripe red fruits, blackberry, raspberry and cherry, shades of cinnamon and clove
Taste: soft, sweet tannins with return scents of coffee and liquorice
Alcohol: 13,5 %
Gastronomy: roasted red meats and game (such as hare, wild boar, roe and deer)
