VINIFICATION AND REFINEMENT
Yield: 6000 kg per hectare
Harvest Time: beginning of September
Harvest: by hand in baskets (10 kg)
Wine Pressing: closed soft wine press
Fermentation: Creation of the basis in steel vats (18/19°C) for about 20 days
Refermentation: in autoclave with stop on yeast for about 6 months with use of selected cryogenic yeasts, whole process is carried in our winery
