VINIFICATION AND REFINEMENT:
Yield: 6.000 kg per hectare
Harvest Time: mid of September
Harvest: by hand in baskets (10 kg)
Cooling of the destemmed grapes and pellicle maceration without sulphites.
Cooling of the must to 10°C for static decantation.
Wine pressing: with closed soft press and hyperoxigenation
Fermentation: : in steel vats (20°C) for 15 days and final tangential filtration
Refermentation: in autoclave (Martinotti) for about 25 days after fermentation at low temperature

Fragrance: delicate, typical, lightly aromatic, floral and perfumed
