VINIFICATION AND REFINEMENT

Harvest: by hand in baskets (10 Kg)
Wine pressing: with closed soft press and hyperoxigenation.
Fermentation: in steel vats (18/19°C ) for about 21 days
Refinement: 9 months of which 6 in Allier oak barriques for 20% of the whole.

Colour: straw yellow with green nuances, bright
Fragrance: intense, persistent with green apple, hazelnut, cinnamon and honey scents
Taste: dry, aromatic, intense with persistent aftertaste
Alcohol: 13,0 % Vol.
Gastronomy: ideal with hors d’oeuvre dishes as well as with tortellini and first courses, fish, white meat and fresh cheese.
