Harvest: by hand in baskets (10 Kg)
Wine pressing: with closed soft press and hyperoxigenation.
Fermentation: in steel vats (18/19°C ) for about 21 days
Refinement: 9 months of which 6 in Allier oak barriques for 20% of the whole.
